Ingredients

  • 1 cup shelled pistachios, finely chopped
  • 8 ounces white chocolate, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
  2. Stir in the vanilla extract and salt.
  3. Fold in the finely chopped pistachios, reserving a tablespoon for garnish.
  4. Cover the mixture and refrigerate for about 2 hours, or until firm enough to handle.
  5. Once the mixture is firm, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter).
  6. Roll each truffle in powdered sugar to coat, then place on a parchment-lined baking sheet.
  7. Garnish with the reserved chopped pistachios on top of each truffle.
  8. Refrigerate the truffles for an additional 30 minutes to set before serving.
