- 1 cup brown sugar, packed
- 2 large eggs

- 1 package (3.4 oz) pistachio pudding mix
- 1 cup chopped pistachios (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and pistachio pudding mix.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the chopped pistachios.
- Spread the cookie dough evenly into the prepared baking pan.
- Bake for 25-30 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars and serving.
