- 1 ripe banana, frozen
- 1/2 cup fresh spinach
- 1/2 cup plain Greek yogurt
- 1/4 cup shelled pistachios
- 1 tablespoon honey or maple syrup
- 1/4 teaspoon peppermint extract
- 1/4 teaspoon vanilla extract
- 1/2 cup ice cubes
- Toppings:
- 1/4 cup sliced fresh strawberries
- 1/4 cup granola
- 2 tablespoons shredded coconut
- 1 tablespoon chopped fresh mint
Instructions
- In a blender, combine almond milk, frozen banana, spinach, Greek yogurt, pistachios, honey (or maple syrup), peppermint extract, vanilla extract, and ice cubes. Blend until smooth and creamy.
- Taste the smoothie and adjust sweetness if needed by adding more honey or syrup. Blend again if you add anything.
- Pour the smoothie into a bowl and use a spoon to create a smooth surface.
- Decorate the top with sliced strawberries, granola, shredded coconut, and chopped mint.
