A delicious and easy recipe for Pistachio Date Energy Bars with Sea Salt, perfect for a healthy snack.

- 1 cup pitted Medjool dates
- 1 cup raw pistachios
- 1/2 cup rolled oats
- 1/4 cup almond butter
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened shredded coconut (optional)
- 1 tablespoon chia seeds (optional)
Instructions
- In a food processor, combine the pitted dates, raw pistachios, rolled oats, almond butter, sea salt, and vanilla extract. If using, add the shredded coconut and chia seeds.
- Pulse the mixture until it is well combined and starts to stick together. You may need to scrape down the sides of the bowl a few times.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Transfer the mixture into the lined baking dish and press it down firmly and evenly with your hands or a spatula.
- Sprinkle a pinch of sea salt on top for added flavor.
- Cover and refrigerate for at least 1 hour to allow the bars to firm up.
- Once chilled, lift the mixture out of the dish using the parchment paper and cut into bars or squares.
- Store the energy bars in an airtight container in the refrigerator for up to 2 weeks.
Notes
- For a chocolatey twist, add 2 tablespoons of cocoa powder to the mixture before processing.
- Substitute walnuts or almonds for pistachios for a different flavor profile.
