Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup raw pistachios
  • 1/2 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. In a food processor, combine the pitted dates, raw pistachios, rolled oats, almond butter, sea salt, and vanilla extract. If using, add the shredded coconut and chia seeds.
  2. Pulse the mixture until it is well combined and starts to stick together. You may need to scrape down the sides of the bowl a few times.
  3. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  4. Transfer the mixture into the lined baking dish and press it down firmly and evenly with your hands or a spatula.
  5. Sprinkle a pinch of sea salt on top for added flavor.
  6. Cover and refrigerate for at least 1 hour to allow the bars to firm up.
  7. Once chilled, lift the mixture out of the dish using the parchment paper and cut into bars or squares.
  8. Store the energy bars in an airtight container in the refrigerator for up to 2 weeks.

  • For a chocolatey twist, add 2 tablespoons of cocoa powder to the mixture before processing.
