- 1 cup pineapple chunks
- 1 cup kimchi, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, sliced
- 1 tablespoon vegetable oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add garlic and ginger, sautéing until fragrant.
- Stir in the kimchi and cook for 2-3 minutes.
- Add the cooked rice, pineapple chunks, soy sauce, and sesame oil.
- Mix well and cook for another 5-7 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
Notes
- For a spicier version, add some gochujang or chili flakes.
- This dish can be made vegan by ensuring the kimchi is vegan-friendly.
