- 2 lbs chicken thighs
- 1 cup fresh pineapple, diced
- 2 habanero peppers, finely chopped
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix together the soy sauce, honey, garlic, ginger, and chopped habanero peppers.
- Add the chicken thighs to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and season with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- During the last few minutes of grilling, add the diced pineapple to the grill to caramelize.
- Serve the grilled chicken topped with the grilled pineapple.
Notes
- Adjust the number of habanero peppers based on your spice preference.
- For a milder version, remove the seeds from the habanero peppers.
