  • 1 cup fresh pineapple, diced
  • 2 habanero peppers, finely chopped
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the soy sauce, honey, garlic, ginger, and chopped habanero peppers.
  2. Add the chicken thighs to the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and season with salt and pepper.
  5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  6. During the last few minutes of grilling, add the diced pineapple to the grill to caramelize.
  7. Serve the grilled chicken topped with the grilled pineapple.
