Description

Pineapple Curry Lentil Wraps are a delicious and nutritious meal option that combines the flavors of curry, coconut, and fresh pineapple, wrapped in whole wheat or spinach tortillas.


Ingredients

  • 1 cup dried green or brown lentils, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 can (14 ounces) coconut milk
  • 1 cup diced fresh pineapple (or canned, drained)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 4 large whole wheat or spinach tortillas
  • 1 cup fresh spinach leaves
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges for serving

Instructions

  1. In a medium pot, combine the lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  3. Add the curry powder and ground cumin to the skillet, stirring until fragrant, about 30 seconds.
  4. Pour in the coconut milk and add the diced pineapple and soy sauce. Bring to a gentle simmer and cook for 5 minutes, allowing the flavors to meld.
  5. Stir in the cooked lentils and season with salt and pepper to taste. Cook for another 2-3 minutes until heated through.
  6. To assemble the wraps, place a generous scoop of the lentil mixture in the center of each tortilla. Top with fresh spinach leaves and cilantro, if using. Fold in the sides and roll up tightly.
  7. Serve the wraps with lime wedges on the side for squeezing over the top.

Notes

  • For added crunch, include sliced cucumbers or shredded carrots in the wraps.
