Pineapple Curry Lentil Wraps are a delicious and nutritious meal option that combines the flavors of curry, coconut, and fresh pineapple, wrapped in whole wheat or spinach tortillas.

- 1 cup dried green or brown lentils, rinsed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 can (14 ounces) coconut milk
- 1 cup diced fresh pineapple (or canned, drained)
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 4 large whole wheat or spinach tortillas
- 1 cup fresh spinach leaves
- 1/4 cup chopped fresh cilantro (optional)
- Lime wedges for serving
Instructions
- In a medium pot, combine the lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Add the curry powder and ground cumin to the skillet, stirring until fragrant, about 30 seconds.
- Pour in the coconut milk and add the diced pineapple and soy sauce. Bring to a gentle simmer and cook for 5 minutes, allowing the flavors to meld.
- Stir in the cooked lentils and season with salt and pepper to taste. Cook for another 2-3 minutes until heated through.
- To assemble the wraps, place a generous scoop of the lentil mixture in the center of each tortilla. Top with fresh spinach leaves and cilantro, if using. Fold in the sides and roll up tightly.
- Serve the wraps with lime wedges on the side for squeezing over the top.
Notes
- For added crunch, include sliced cucumbers or shredded carrots in the wraps.
- Substitute the lentils with chickpeas for a different texture and flavor.
