Ingredients

- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup fresh pineapple, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey (optional)
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.
- In a large mixing bowl, combine the diced pineapple, cherry tomatoes, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
- Once the quinoa has cooled, fluff it with a fork and add it to the mixing bowl with the vegetables.
- Pour the dressing over the quinoa and vegetable mixture, and toss gently to combine.
- Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
Notes
- For added protein, consider mixing in black beans or grilled chicken.
- Substitute mango for pineapple for a different tropical flavor.
