Ingredients

  • ½ cup unsweetened shredded coconut
  • ½ cup unsalted butter, melted
  • ¼ cup erythritol or your preferred keto sweetener
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup sugar-free white chocolate chips
  • 1 cup unsweetened crushed pineapple, drained
  • ½ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine the almond flour, shredded coconut, melted butter, erythritol, vanilla extract, and salt. Stir until well combined and crumbly.
  3. Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. Bake the crust in the preheated oven for 10 minutes, then remove and let it cool slightly.
  5. Sprinkle the sugar-free white chocolate chips evenly over the crust, followed by the drained crushed pineapple and chopped nuts.
  6. Return the pan to the oven and bake for an additional 20-25 minutes, or until the edges are golden and the center is set.
  7. Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift the bars out using the parchment paper and cut into squares.
  8. Serve chilled or at room temperature.
