- 1 ½ cups almond flour
- ½ cup unsweetened shredded coconut
- ½ cup unsalted butter, melted
- ¼ cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup sugar-free white chocolate chips
- 1 cup unsweetened crushed pineapple, drained
- ½ cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a mixing bowl, combine the almond flour, shredded coconut, melted butter, erythritol, vanilla extract, and salt. Stir until well combined and crumbly.
- Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
- Bake the crust in the preheated oven for 10 minutes, then remove and let it cool slightly.
- Sprinkle the sugar-free white chocolate chips evenly over the crust, followed by the drained crushed pineapple and chopped nuts.
- Return the pan to the oven and bake for an additional 20-25 minutes, or until the edges are golden and the center is set.
- Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift the bars out using the parchment paper and cut into squares.
- Serve chilled or at room temperature.
