Delicious and tropical Piña Colada Bars made with pineapple and coconut for a refreshing treat.
Ingredients

- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup sugar
- 1/2 cup all-purpose flour
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, combine the crushed pineapple, shredded coconut, sugar, flour, and melted butter.
- Add the eggs, vanilla extract, baking powder, and salt to the mixture and stir until well combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
- For an extra tropical flavor, consider adding a splash of rum extract.
- These bars can be stored in an airtight container for up to a week.
