Ingredients

  • 8 ounces fresh mushrooms, cleaned and sliced
  • 1 cup fresh verdina beans, trimmed and rinsed
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 cloves garlic, peeled and smashed
  • 1 teaspoon black peppercorns
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions

  1. In a medium saucepan, combine the white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring until the sugar and salt dissolve completely.
  2. Add the sliced mushrooms, garlic, black peppercorns, dried thyme, and bay leaf to the boiling mixture. Reduce the heat and simmer for 5 minutes.
  3. In a separate pot, bring water to a boil and blanch the verdina beans for 3-4 minutes until tender but still crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again after a few minutes.
  4. Pack the blanched verdina beans into a clean glass jar, then add the pickled mushrooms along with the pickling liquid, ensuring everything is submerged.
  5. Drizzle the olive oil over the top, seal the jar, and allow it to cool to room temperature.
  6. Once cooled, refrigerate the jar for at least 24 hours before serving to allow the flavors to meld.

Notes

  • For a spicier kick, add a few slices of fresh jalapeño or red pepper flakes to the pickling liquid.
