A delicious recipe for pickled mushrooms combined with fresh verdina beans, perfect as a side dish or appetizer.

- 8 ounces fresh mushrooms, cleaned and sliced
- 1 cup fresh verdina beans, trimmed and rinsed
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons sugar
- 1 tablespoon salt
- 2 cloves garlic, peeled and smashed
- 1 teaspoon black peppercorns
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon olive oil
Instructions
- In a medium saucepan, combine the white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring until the sugar and salt dissolve completely.
- Add the sliced mushrooms, garlic, black peppercorns, dried thyme, and bay leaf to the boiling mixture. Reduce the heat and simmer for 5 minutes.
- In a separate pot, bring water to a boil and blanch the verdina beans for 3-4 minutes until tender but still crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again after a few minutes.
- Pack the blanched verdina beans into a clean glass jar, then add the pickled mushrooms along with the pickling liquid, ensuring everything is submerged.
- Drizzle the olive oil over the top, seal the jar, and allow it to cool to room temperature.
- Once cooled, refrigerate the jar for at least 24 hours before serving to allow the flavors to meld.
Notes
- For a spicier kick, add a few slices of fresh jalapeño or red pepper flakes to the pickling liquid.
- Experiment with different herbs such as dill or oregano for a unique flavor profile.
