Instructions

  1. Make the candy shards: In a small saucepan, mix the sugar, corn syrup, and water. Heat over medium heat until the mixture reaches 150°C (300°F) on a candy thermometer (hard crack stage). Remove from heat, stir in green food coloring and citric acid. Pour onto a lined baking tray. Let it cool and harden completely, then break into shards.
  2. Mix the float base: In a glass, combine pickle juice and lemon-lime soda. Stir gently. Add a splash of lime or honey if you’d like to mellow out the saltiness.
  3. Assemble the float: Drop in 2 scoops of vanilla ice cream. It will fizz and foam like a soda float with a zesty twist!
  4. Top it off: Garnish with cucumber/pickle slices and insert a few candy-tang shards into the float for a dramatic look and flavor punch.
