A unique and refreshing pickle-juice float topped with candy-tang glass shards for a delightful twist.

- 1 ½ cups cold pickle juice (preferably from dill pickles)
- 1 cup lemon-lime soda (like Sprite or 7-Up)
- 2 scoops vanilla ice cream
- Optional: splash of lime juice or a bit of honey for balance
- Thin cucumber or pickle slices (for garnish)
- ½ cup sugar
- 2 tbsp corn syrup or glucose syrup
- 2 tbsp water
- A few drops green food coloring (optional)
- ½ tsp citric acid (for the tangy effect)
Instructions
- Make the candy shards: In a small saucepan, mix the sugar, corn syrup, and water. Heat over medium heat until the mixture reaches 150°C (300°F) on a candy thermometer (hard crack stage). Remove from heat, stir in green food coloring and citric acid. Pour onto a lined baking tray. Let it cool and harden completely, then break into shards.
- Mix the float base: In a glass, combine pickle juice and lemon-lime soda. Stir gently. Add a splash of lime or honey if you’d like to mellow out the saltiness.
- Assemble the float: Drop in 2 scoops of vanilla ice cream. It will fizz and foam like a soda float with a zesty twist!
- Top it off: Garnish with cucumber/pickle slices and insert a few candy-tang shards into the float for a dramatic look and flavor punch.
