Ingredients

  • 1 pound thinly sliced beef (such as sirloin or ribeye)
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large cabbage leaves (green or Napa)
  • 4 slices provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced beef and cook for about 3-4 minutes until browned. Season with garlic powder, salt, and pepper.
  2. Add the sliced onion and bell pepper to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.
  3. Reduce the heat to low and place a slice of provolone cheese on top of the beef and vegetable mixture. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese is melted.
  4. While the cheese is melting, carefully remove the cabbage leaves from the head and blanch them in boiling water for about 1-2 minutes until slightly softened. Drain and pat dry.
  5. Once the cheese is melted, remove the skillet from heat. Spoon the beef and vegetable mixture onto each cabbage leaf, fold the sides, and roll it up like a burrito.
  6. Garnish with chopped parsley and serve warm.

  • For a spicier kick, add sliced jalapeños or a dash of hot sauce to the beef mixture.
  • Substitute the provolone cheese with cheddar or Swiss for a different flavor profile.
