Description
A healthy twist on the classic Philly cheesesteak, wrapped in cabbage leaves for a low-carb option.
Ingredients

- 1 pound thinly sliced beef (such as sirloin or ribeye)
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 large cabbage leaves (green or Napa)
- 4 slices provolone cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sliced beef and cook for about 3-4 minutes until browned. Season with garlic powder, salt, and pepper.
- Add the sliced onion and bell pepper to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Reduce the heat to low and place a slice of provolone cheese on top of the beef and vegetable mixture. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese is melted.
- While the cheese is melting, carefully remove the cabbage leaves from the head and blanch them in boiling water for about 1-2 minutes until slightly softened. Drain and pat dry.
- Once the cheese is melted, remove the skillet from heat. Spoon the beef and vegetable mixture onto each cabbage leaf, fold the sides, and roll it up like a burrito.
- Garnish with chopped parsley and serve warm.
Notes
- For a spicier kick, add sliced jalapeños or a dash of hot sauce to the beef mixture.
- Substitute the provolone cheese with cheddar or Swiss for a different flavor profile.
