  • 1 pound large shrimp, peeled and deveined
  • 1 cup homemade or store-bought basil pesto
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon crushed red pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil leaves for decoration

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Cook the fettuccine according to the package directions until it reaches an al dente texture. Before draining, save about half a cup of the cooking water, then drain the pasta and set it aside.
  2. In a spacious skillet, warm the olive oil over medium heat. Introduce the chopped garlic and optional crushed red pepper, sautéing for roughly a minute until the garlic is fragrant and golden.
  3. Toss the shrimp into the skillet, seasoning them with salt and pepper. Sauté for about 2-3 minutes on each side until they turn a lovely pink and are fully cooked through.
  4. Lower the heat and fold in the basil pesto, ensuring the shrimp are well coated. If the mixture appears too thick, gradually mix in some of the reserved pasta water until you achieve a creamy consistency.
  5. Gently add the fettuccine to the skillet, tossing everything together until the pasta is evenly coated with the pesto and shrimp.
  6. Take the skillet off the heat and sprinkle the grated Parmesan cheese over the top. Give it a gentle stir to combine all the flavors.
  7. Serve hot, garnished with fresh basil leaves and additional Parmesan cheese if you like.
