Description

Pesto Prosciutto Cauliflower Crust Pizza is a delicious and healthy alternative to traditional pizza, featuring a cauliflower crust topped with pesto, prosciutto, and cherry tomatoes.


Ingredients

  • 1 medium head of cauliflower, riced (about 4 cups)
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup basil pesto
  • 4 ounces thinly sliced prosciutto
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the riced cauliflower, egg, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
  4. Transfer the cauliflower mixture to the prepared baking sheet and shape it into a round pizza crust, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 25-30 minutes, or until golden brown and firm.
  6. Remove the crust from the oven and spread the basil pesto evenly over the top.
  7. Layer the prosciutto and cherry tomatoes on top of the pesto.
  8. Return the pizza to the oven and bake for an additional 10 minutes, or until the tomatoes are slightly softened.
  9. Remove from the oven and garnish with fresh basil leaves before slicing.

Notes

  • For a spicier kick, add red pepper flakes to the pesto before spreading it on the crust.
  • You can substitute the prosciutto with cooked chicken or turkey for a different protein option.
