- 1 pound flank steak, thinly sliced against the grain
- 2 tablespoons soy sauce
- 1 tablespoon red wine vinegar
- 1 tablespoon vegetable oil
- 1 medium onion, sliced
- 1 bell pepper (red or yellow), sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 large potatoes, peeled and cut into thin strips
- Vegetable oil for frying
- Fresh cilantro for garnish (optional)
Instructions
- Begin by marinating the thinly sliced flank steak in a bowl with soy sauce and red wine vinegar for a minimum of 15 minutes to enhance the flavors.
- In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef and stir-fry for approximately 3-4 minutes until it achieves a nice brown color. Remove the beef from the skillet and set it aside on a plate.
- In the same skillet, toss in the sliced onion and bell pepper, stir-frying for about 2-3 minutes until they begin to soften.
- Introduce the minced garlic, ground cumin, paprika, and season with salt and pepper, cooking for an additional minute to release the aromas.
- Return the beef to the skillet, mixing everything thoroughly, and continue to cook for another 2-3 minutes until the beef is fully cooked and heated through.
- Meanwhile, in a separate frying pan, heat vegetable oil over medium heat. Add the potato strips and fry them until they turn golden brown and crispy, which should take about 5-7 minutes.
- Once done, drain the potatoes on paper towels and sprinkle with salt.
- To serve, layer the crispy fried potatoes on a plate and top them generously with the sizzling beef stir-fry. Garnish with fresh cilantro if desired for an added touch of flavor.
