- 4 cups mixed salad greens (such as spinach, arugula, and kale)
- 2 cups butternut squash, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dried cranberries
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
Instructions
- Preheat your oven to 400°F (200°C).
- On a baking sheet, toss the diced butternut squash with olive oil, salt, and black pepper. Spread it out in a single layer.
- Roast in the oven for 25-30 minutes, or until the squash is tender and lightly browned, stirring halfway through.
- While the squash is roasting, prepare the salad by placing the mixed greens in a large bowl.
- Once the squash is done, let it cool for a few minutes before adding it to the salad bowl.
- Add the dried cranberries, feta cheese, and walnuts to the greens and squash.
- In a small bowl, whisk together the balsamic vinegar and honey. Drizzle over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for up to 30 minutes before serving for a refreshing touch.
Notes
- For a heartier salad, add grilled chicken or chickpeas for extra protein.
- To make it vegan, substitute the feta with avocado and omit the honey or use a vegan sweetener.
