Ingredients

  • 4 cups mixed salad greens (such as spinach, arugula, and kale)
  • 2 cups butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the diced butternut squash with olive oil, salt, and black pepper. Spread it out in a single layer.
  3. Roast in the oven for 25-30 minutes, or until the squash is tender and lightly browned, stirring halfway through.
  4. While the squash is roasting, prepare the salad by placing the mixed greens in a large bowl.
  5. Once the squash is done, let it cool for a few minutes before adding it to the salad bowl.
  6. Add the dried cranberries, feta cheese, and walnuts to the greens and squash.
  7. In a small bowl, whisk together the balsamic vinegar and honey. Drizzle over the salad and toss gently to combine.
  8. Serve immediately or chill in the refrigerator for up to 30 minutes before serving for a refreshing touch.
