- 2 cups all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
- 3/4 cup warm water (about 110°F)
- Extra flour for dusting
Instructions
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the flour and salt.
- Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Preheat your oven to 475°F and place a baking stone or an upside-down baking sheet inside to heat.
- Punch down the risen dough and divide it into 8 equal pieces.
- Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.
- Carefully place the pitas on the hot baking stone or sheet and bake for 5-7 minutes, or until they puff up and are lightly golden.
- Remove from the oven and cover with a clean kitchen towel to keep warm.
- Serve warm with your favorite dips or fillings.
Notes
- For a whole wheat version, substitute half of the all-purpose flour with whole wheat flour.
- To add flavor, mix in 1 teaspoon of dried oregano or thyme into the flour before combining with the wet ingredients.
