Ingredients

  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup warm water (about 110°F)
  • Extra flour for dusting

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt.
  3. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat your oven to 475°F and place a baking stone or an upside-down baking sheet inside to heat.
  7. Punch down the risen dough and divide it into 8 equal pieces.
  8. Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.
  9. Carefully place the pitas on the hot baking stone or sheet and bake for 5-7 minutes, or until they puff up and are lightly golden.
  10. Remove from the oven and cover with a clean kitchen towel to keep warm.
  11. Serve warm with your favorite dips or fillings.

Notes

  • For a whole wheat version, substitute half of the all-purpose flour with whole wheat flour.
  • To add flavor, mix in 1 teaspoon of dried oregano or thyme into the flour before combining with the wet ingredients.
