Ingredients

- 2 pounds cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the halved cherry tomatoes, olive oil, sea salt, black pepper, and garlic powder. Toss until the tomatoes are well coated.
- Spread the seasoned tomatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the tomatoes are soft and slightly caramelized.
- Remove the tomatoes from the oven and drizzle with balsamic vinegar. Sprinkle with fresh basil and parsley, tossing gently to combine.
- Serve warm or at room temperature as a side dish or topping for salads, pasta, or bruschetta.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the seasoning mix.
- Try substituting the cherry tomatoes with grape tomatoes or even larger heirloom tomatoes cut into wedges for a different flavor and presentation.
