Description

A delicious roasted dish featuring sweet cherry tomatoes with a peppery kick.


Ingredients

  • 2 pounds cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved cherry tomatoes, olive oil, sea salt, black pepper, and garlic powder. Toss until the tomatoes are well coated.
  3. Spread the seasoned tomatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20-25 minutes, or until the tomatoes are soft and slightly caramelized.
  5. Remove the tomatoes from the oven and drizzle with balsamic vinegar. Sprinkle with fresh basil and parsley, tossing gently to combine.
  6. Serve warm or at room temperature as a side dish or topping for salads, pasta, or bruschetta.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the seasoning mix.
  • Try substituting the cherry tomatoes with grape tomatoes or even larger heirloom tomatoes cut into wedges for a different flavor and presentation.
