- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon peppermint extract
- 1/2 cup crushed peppermint candies or candy canes
- 1/2 cup white chocolate chips
- 1/2 cup red food coloring
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peppermint extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the crushed peppermint candies and white chocolate chips.
- Divide the dough in half. To one half, add the red food coloring and mix until the color is evenly distributed.
- Using a tablespoon, scoop out a portion of the plain dough and a portion of the red dough. Roll them together to form a ball and place it on the prepared baking sheet.
- Repeat with the remaining dough, spacing the cookies about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- These cookies can be stored in an airtight container for up to a week.
- For a festive touch, drizzle melted dark chocolate over the cooled cookies.
- You can substitute the peppermint extract with almond extract for a different flavor profile.
