Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips
  • 1/2 cup crushed peppermint candies
  • 1 cup white chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add the vanilla extract and mix until combined.
  3. Gradually add the flour and salt to the butter mixture, mixing until just combined. Stir in the mini chocolate chips and crushed peppermint candies.
  4. Press the cookie dough mixture evenly into the bottom of the prepared baking dish. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean. Allow to cool completely in the pan.
  5. In a microwave-safe bowl, melt the white chocolate chips and vegetable oil in 30-second intervals, stirring in between until smooth. Pour the melted white chocolate over the cooled cookie dough layer, spreading it evenly.
  6. Chill the bars in the refrigerator for at least 1 hour to set the chocolate. Once set, lift the bars out of the pan using the parchment paper overhang and cut into squares.

  • For a festive touch, add a few drops of peppermint extract to the cookie dough for an extra minty flavor.
