  • 1 can (14 ounces) coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice or quinoa, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  2. Add the chicken pieces to the skillet and cook until browned on all sides, about 5-7 minutes. Sprinkle the curry powder, cumin, and coriander over the chicken, stirring to coat evenly.
  3. Pour in the coconut milk, peanut butter, soy sauce, and honey. Stir well to combine and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 15 minutes, stirring occasionally.
  4. Add the sliced red bell pepper and snap peas to the curry. Cook for an additional 5 minutes until the vegetables are tender but still crisp.
  5. Season with salt and pepper to taste. Serve the curry over cooked rice or quinoa and garnish with fresh cilantro.
