- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (14 ounces) coconut milk
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 red bell pepper, sliced
- 1 cup snap peas
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or quinoa, for serving
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the chicken pieces to the skillet and cook until browned on all sides, about 5-7 minutes. Sprinkle the curry powder, cumin, and coriander over the chicken, stirring to coat evenly.
- Pour in the coconut milk, peanut butter, soy sauce, and honey. Stir well to combine and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 15 minutes, stirring occasionally.
- Add the sliced red bell pepper and snap peas to the curry. Cook for an additional 5 minutes until the vegetables are tender but still crisp.
- Season with salt and pepper to taste. Serve the curry over cooked rice or quinoa and garnish with fresh cilantro.
Notes
- For a spicier kick, add a teaspoon of red pepper flakes or a diced jalapeño when cooking the onions.
- Substitute the chicken with firm tofu for a vegetarian option, and sauté until golden before adding the spices and sauces.
