- 3 ripe bananas, mashed
- 1/2 cup peanut butter (creamy or chunky)
- 1/4 cup sugar
- 2 large eggs
- 1/4 cup milk (or almond milk)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the bananas until smooth. Add peanut butter, sugar, eggs, milk, and vanilla extract, and stir until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
