Peach Posset is an elegant and creamy dessert that highlights the fresh flavors of ripe peaches.

- 2 cups heavy cream
- 2/3 cup granulated sugar
- 1/4 cup fresh lemon juice
- 2 ripe peaches, peeled and diced
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, combine the heavy cream and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved and the mixture just begins to simmer. Do not let it boil.
- Remove the saucepan from heat and stir in the lemon juice, vanilla extract, and a pinch of salt. Mix well until fully combined.
- Allow the mixture to cool for about 10 minutes, then pour it into individual serving cups or ramekins.
- Cover the cups with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, chill overnight.
- Before serving, top each posset with diced peaches. Enjoy chilled.
