A delightful twist on the classic peanut butter and jelly sandwich, these PBJ Sandwich Cookies are a fun and tasty treat.

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup jelly or jam (your choice, such as grape or strawberry)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine the creamy peanut butter and softened butter. Beat with an electric mixer until smooth and creamy.
- Add the granulated sugar and brown sugar to the peanut butter mixture. Beat until well combined.
- Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Flatten each ball slightly with the bottom of a glass or your hand. Make a small indentation in the center of each cookie with your thumb.
- Fill each indentation with about 1/2 teaspoon of jelly or jam.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- If desired, dust with powdered sugar before serving.
Notes
- For a chocolate twist, substitute half of the all-purpose flour with cocoa powder.
- Try using different flavors of jelly or jam, such as raspberry or apricot, for a unique taste.
