Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup jelly or jam (your choice, such as grape or strawberry)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, combine the creamy peanut butter and softened butter. Beat with an electric mixer until smooth and creamy.
  3. Add the granulated sugar and brown sugar to the peanut butter mixture. Beat until well combined.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Flatten each ball slightly with the bottom of a glass or your hand. Make a small indentation in the center of each cookie with your thumb.
  8. Fill each indentation with about 1/2 teaspoon of jelly or jam.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  11. If desired, dust with powdered sugar before serving.

Notes

  • For a chocolate twist, substitute half of the all-purpose flour with cocoa powder.
  • Try using different flavors of jelly or jam, such as raspberry or apricot, for a unique taste.
