- 2 medium zucchinis, cut into fries
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/2 cup almond flour
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
- In a shallow bowl, combine the grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper.
- In another shallow bowl, whisk the eggs until well beaten.
- Place the almond flour in a third shallow bowl.
- Dip each zucchini fry first into the almond flour, then into the beaten eggs, and finally coat it in the Parmesan mixture. Make sure each fry is evenly coated.
- Arrange the coated zucchini fries in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For extra crunch, try adding crushed pork rinds to the Parmesan mixture.
- Experiment with different seasonings like smoked paprika or Italian seasoning for a flavor twist.
