A delicious and crispy low-carb snack made with zucchini and Parmesan cheese, perfect for a keto diet.


Ingredients

  • 2 medium zucchinis, cut into fries
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup almond flour
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  2. In a shallow bowl, combine the grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper.
  3. In another shallow bowl, whisk the eggs until well beaten.
  4. Place the almond flour in a third shallow bowl.
  5. Dip each zucchini fry first into the almond flour, then into the beaten eggs, and finally coat it in the Parmesan mixture. Make sure each fry is evenly coated.
  6. Arrange the coated zucchini fries in a single layer on the prepared baking sheet.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For extra crunch, try adding crushed pork rinds to the Parmesan mixture.
  • Experiment with different seasonings like smoked paprika or Italian seasoning for a flavor twist.
