  • 1/2 teaspoon paprika
  • 1 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Peel the squash and cut it into 1-inch cubes.
  4. In a large bowl, toss the cubed squash with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.
  5. Spread the squash in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
  7. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the squash.
  8. Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
