- 2 medium butternut squash (about 3 pounds total)
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F.
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Peel the squash and cut it into 1-inch cubes.
- In a large bowl, toss the cubed squash with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.
- Spread the squash in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
- Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the squash.
- Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped parsley before serving.

- For a spicy kick, add a pinch of cayenne pepper to the seasoning mix.
