Description

Crispy and delicious Parmesan-Breadcrumb Zucchini Fries made in an air fryer.


Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchinis into fry-shaped pieces.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini piece into the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini fries in the air fryer basket in a single layer.
  7. Spray the fries lightly with cooking spray.
  8. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.

Notes

  • For extra crunch, you can double coat the zucchini fries.
  • Serve with marinara sauce or your favorite dipping sauce.
