- 2 (6-ounce) salmon fillets
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a small bowl, mix the panko breadcrumbs, olive oil, garlic powder, dried parsley, salt, black pepper, and paprika until well combined.
- Place the salmon fillets on the prepared baking sheet, skin side down. Spread the Dijon mustard evenly over the top of each fillet.
- Press the panko mixture onto the mustard-coated salmon, ensuring an even layer covers the top of each fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the crust is golden brown.
- Remove from the oven and drizzle with lemon juice before serving.
Notes
- This recipe serves 2.
- For added flavor, try mixing in some grated Parmesan cheese with the panko breadcrumbs.
- If you prefer a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture.
