Ingredients

  • 1 cup whipping cream
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla essence
  • 1/4 teaspoon sea salt
  • 2 teaspoons gelatin powder
  • 3 tablespoons chilled water
  • 1/4 cup pandan extract

Instructions

  1. Combine the gelatin powder with the chilled water in a small bowl and let it sit for approximately 5 minutes until it swells.
  2. In a medium saucepan, mix together the coconut cream, whipping cream, brown sugar, vanilla essence, and sea salt.
  3. Gently heat the mixture over medium flame, stirring frequently until the sugar is completely dissolved and the mixture is warm but not boiling.
  4. Remove the saucepan from heat and incorporate the bloomed gelatin, stirring until fully dissolved.
  5. Add the pandan extract and blend thoroughly.
  6. Carefully pour the creamy mixture into small cups or molds.
  7. Place them in the refrigerator for at least 4 hours, or until they firm up.
  8. Serve chilled, optionally topped with toasted coconut or seasonal fruits.
