- 1 cup whipping cream
- 1/2 cup brown sugar
- 2 teaspoons vanilla essence
- 1/4 teaspoon sea salt
- 2 teaspoons gelatin powder
- 3 tablespoons chilled water
- 1/4 cup pandan extract
Instructions
- Combine the gelatin powder with the chilled water in a small bowl and let it sit for approximately 5 minutes until it swells.
- In a medium saucepan, mix together the coconut cream, whipping cream, brown sugar, vanilla essence, and sea salt.
- Gently heat the mixture over medium flame, stirring frequently until the sugar is completely dissolved and the mixture is warm but not boiling.
- Remove the saucepan from heat and incorporate the bloomed gelatin, stirring until fully dissolved.
- Add the pandan extract and blend thoroughly.
- Carefully pour the creamy mixture into small cups or molds.
- Place them in the refrigerator for at least 4 hours, or until they firm up.
- Serve chilled, optionally topped with toasted coconut or seasonal fruits.
Notes
- For enhanced flavor, consider adding a hint of sea salt to amplify the sweetness.
- You can replace half of the coconut cream with cashew milk for a unique twist.
