Instructions

  1. In a mixing bowl, whisk together the flour, eggs, coconut milk, pandan extract, sugar, and salt until smooth. Stir in the melted butter. Let the batter rest for about 30 minutes at room temperature.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about ¼ cup of the batter into the skillet, swirling it to cover the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.
  3. Carefully flip the crepe and cook for another 1-2 minutes on the other side. Remove from the skillet and place on a plate. Repeat with the remaining batter, stacking the crepes as you go.
  4. In a separate bowl, combine the coconut cream, powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and creamy.
  5. To assemble, place a crepe on a plate, spread a generous spoonful of the coconut cream filling in the center, and fold the crepe over. Repeat with the remaining crepes.
  6. Serve warm, garnished with toasted shredded coconut and fresh fruit if desired.
