Ingredients

  • 4 cups chicken stock
  • 1 pound boneless, skinless chicken thighs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, cut into small pieces
  • 1 medium potato, peeled and cubed
  • 1 medium sweet potato, peeled and cubed
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, stirring frequently until the onion softens and turns translucent (about 3-4 minutes).
  3. Add the chicken thighs to the pot and sear for approximately 5 minutes until they develop a light golden color on both sides.
  4. Pour in the chicken stock and bring the mixture to a vigorous boil.
  5. Add the diced carrots, potato, sweet potato, corn, cumin, oregano, and season generously with salt and pepper.
  6. Lower the heat and let the stew simmer gently for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Carefully take out the chicken thighs and shred them using two forks.
  8. Return the shredded chicken to the pot, stirring well to combine.
  9. Squeeze in the lime juice, tasting and adjusting the seasoning as needed.
  10. Ladle the stew into bowls and finish with a sprinkle of fresh cilantro on top before serving.

  • For an extra kick, incorporate diced jalapeños or a splash of hot sauce.
  • You can swap chicken thighs for breasts for a lighter option, but be mindful of the cooking time as breasts may cook more quickly.
