  • 4 tablespoons duck fat
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat. Add the duck fat and allow it to melt and heat until shimmering.
  2. While the fat is heating, season the scallops on both sides with sea salt and black pepper.
  3. Once the duck fat is hot, carefully place the scallops in the skillet, making sure not to overcrowd them. You may need to do this in batches.
  4. Sear the scallops for about 2-3 minutes on one side without moving them, until they develop a golden-brown crust.
  5. Flip the scallops and cook for an additional 1-2 minutes, or until they are opaque and firm to the touch.
  6. Remove the scallops from the skillet and place them on a plate. Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.

Notes

  • For added flavor, consider adding minced garlic or shallots to the duck fat while it heats, then remove them before adding the scallops.
