- 1 pound large sea scallops, patted dry
- 4 tablespoons duck fat
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat a large skillet over medium-high heat. Add the duck fat and allow it to melt and heat until shimmering.
- While the fat is heating, season the scallops on both sides with sea salt and black pepper.
- Once the duck fat is hot, carefully place the scallops in the skillet, making sure not to overcrowd them. You may need to do this in batches.
- Sear the scallops for about 2-3 minutes on one side without moving them, until they develop a golden-brown crust.
- Flip the scallops and cook for an additional 1-2 minutes, or until they are opaque and firm to the touch.
- Remove the scallops from the skillet and place them on a plate. Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
Notes
- For added flavor, consider adding minced garlic or shallots to the duck fat while it heats, then remove them before adding the scallops.
- Serve the scallops over a bed of creamy risotto or alongside sautéed greens for a complete meal.
