Ingredients

- 1 pound fresh sardines, cleaned and scaled
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 lemon, zested and juiced
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the sardines under cold water and pat them dry with paper towels.
- In a shallow dish, combine the flour, salt, black pepper, and paprika. Dredge each sardine in the flour mixture, shaking off any excess.
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until the butter is melted and bubbly.
- Add the sardines to the skillet in a single layer, cooking for about 3-4 minutes on each side until golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.
- Once cooked, transfer the sardines to a serving plate and keep warm.
- In the same skillet, add the remaining 2 tablespoons of butter, lemon zest, and lemon juice. Stir until the butter is melted and the sauce is well combined.
- Drizzle the lemon butter sauce over the sardines and garnish with chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the flour mixture.
- Serve with a side of crusty bread or a fresh green salad for a complete meal.
