A delightful recipe for pan-fried sardines drizzled with a zesty lemon butter sauce.


Ingredients

  • 1 pound fresh sardines, cleaned and scaled
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the sardines under cold water and pat them dry with paper towels.
  2. In a shallow dish, combine the flour, salt, black pepper, and paprika. Dredge each sardine in the flour mixture, shaking off any excess.
  3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until the butter is melted and bubbly.
  4. Add the sardines to the skillet in a single layer, cooking for about 3-4 minutes on each side until golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.
  5. Once cooked, transfer the sardines to a serving plate and keep warm.
  6. In the same skillet, add the remaining 2 tablespoons of butter, lemon zest, and lemon juice. Stir until the butter is melted and the sauce is well combined.
  7. Drizzle the lemon butter sauce over the sardines and garnish with chopped parsley before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the flour mixture.
  • Serve with a side of crusty bread or a fresh green salad for a complete meal.
