Description

A flavorful and zesty Palestinian Sumac Chicken served on warm flatbread, perfect for wraps.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons sumac
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 4 large flatbreads (pita or lavash)
  • 1 cup chopped tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup finely chopped fresh parsley
  • 1/4 cup Greek yogurt
  • 1 tablespoon tahini paste
  • Lemon wedges for garnish

Instructions

  1. Mix together the sumac, smoked paprika, garlic powder, onion powder, sea salt, black pepper, olive oil, and lemon juice in a large bowl.
  2. Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least one hour, preferably overnight.
  3. Heat your grill or skillet over medium-high heat. Remove the marinated chicken from the fridge and let excess marinade drip off.
  4. Grill the chicken for approximately 6-7 minutes on each side, or until it reaches an internal temperature of 165°F and has a golden-brown crust.
  5. Remove the chicken from heat and let it rest for about 5 minutes before slicing into strips.
  6. Warm the flatbreads in a dry skillet for a couple of minutes on each side, or wrap in foil and heat in a preheated oven at 350°F for about 5 minutes.
  7. In a separate bowl, combine the Greek yogurt and tahini paste, stirring until smooth and creamy.
  8. To assemble the wraps, lay down slices of grilled chicken on each flatbread, top with chopped tomatoes, diced cucumbers, and fresh parsley. Drizzle with the yogurt-tahini mixture and serve with lemon wedges.

Notes

  • For best flavor, marinate the chicken overnight.
  • Adjust the amount of sumac to taste for more or less tanginess.
  • Flatbreads can be warmed in the oven or on a skillet.
