Ingredients

  • 2 cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon apple cider vinegar
  • 1 cup raw cashews, soaked for a minimum of 4 hours
  • 1/2 cup coconut cream
  • 1/4 cup honey or maple syrup (to taste)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon beet juice (for vibrant color)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch springform pan with coconut oil.
  2. In a large bowl, combine the almond flour, cocoa powder, baking soda, and sea salt, stirring until well blended.
  3. In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, vanilla extract, and apple cider vinegar until smooth.
  4. Gradually incorporate the wet ingredients into the dry mixture, stirring until thoroughly combined.
  5. Firmly press this mixture into the bottom of the prepared springform pan to create a solid crust.
  6. Bake for 15-20 minutes, or until the crust is set, then allow it to cool completely.
  7. While the crust cools, drain the soaked cashews and transfer them to a blender or food processor.
  8. Add the coconut cream, honey or maple syrup, vanilla extract, lemon juice, and beet juice, and blend until silky and creamy.
  9. Once the crust has cooled, pour the cheesecake filling over it, spreading it evenly with a spatula.
  10. Place the cheesecake in the refrigerator and let it chill for at least 4 hours, or preferably overnight.
  11. When ready to serve, carefully remove the cheesecake from the springform pan and slice it into generous pieces.

  • For an extra layer of flavor, consider incorporating a teaspoon of espresso powder into the filling.
