Description

Oxtail Congee is a comforting and hearty dish that combines tender oxtail with creamy rice, perfect for any meal.


Ingredients

  • 2 pounds oxtail, cut into pieces
  • 1 cup jasmine rice
  • 8 cups water or low-sodium chicken broth
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 2 green onions, chopped (for garnish)
  • Soy sauce, to taste
  • Salt and pepper, to taste
  • Sesame oil, for drizzling (optional)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sliced ginger, cooking for another 1-2 minutes until fragrant.
  3. Add the oxtail pieces to the pot and brown on all sides, about 5-7 minutes.
  4. Pour in the water or chicken broth, bringing the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 2 hours, or until the oxtail is tender.
  5. Remove the oxtail from the pot and set aside to cool slightly. Strain the broth to remove any solids and return the liquid to the pot.
  6. Add the jasmine rice to the strained broth and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for about 30-40 minutes, or until the rice is soft and the congee reaches your desired consistency.
  7. While the rice is cooking, remove the meat from the oxtail bones and shred it into bite-sized pieces. Discard the bones and any excess fat.
  8. Stir the shredded oxtail back into the congee, seasoning with soy sauce, salt, and pepper to taste.
  9. Serve hot, garnished with chopped green onions and a drizzle of sesame oil if desired.

Notes

  • For a spicier version, add sliced jalapeños or a dash of chili oil when serving.
  • You can substitute the oxtail with beef shank or short ribs for a different flavor profile.
