Oxtail Congee is a comforting and hearty dish that combines tender oxtail with creamy rice, perfect for any meal.

- 2 pounds oxtail, cut into pieces
- 1 cup jasmine rice
- 8 cups water or low-sodium chicken broth
- 1 tablespoon vegetable oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1-inch piece ginger, sliced
- 2 green onions, chopped (for garnish)
- Soy sauce, to taste
- Salt and pepper, to taste
- Sesame oil, for drizzling (optional)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced ginger, cooking for another 1-2 minutes until fragrant.
- Add the oxtail pieces to the pot and brown on all sides, about 5-7 minutes.
- Pour in the water or chicken broth, bringing the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 2 hours, or until the oxtail is tender.
- Remove the oxtail from the pot and set aside to cool slightly. Strain the broth to remove any solids and return the liquid to the pot.
- Add the jasmine rice to the strained broth and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for about 30-40 minutes, or until the rice is soft and the congee reaches your desired consistency.
- While the rice is cooking, remove the meat from the oxtail bones and shred it into bite-sized pieces. Discard the bones and any excess fat.
- Stir the shredded oxtail back into the congee, seasoning with soy sauce, salt, and pepper to taste.
- Serve hot, garnished with chopped green onions and a drizzle of sesame oil if desired.
Notes
- For a spicier version, add sliced jalapeños or a dash of chili oil when serving.
- You can substitute the oxtail with beef shank or short ribs for a different flavor profile.
