Description

A delicious and easy-to-make overnight breakfast casserole that combines eggs, cheese, sausage, and spinach for a hearty morning meal.

Ingredients

Scale
  • 8 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup chopped spinach (fresh or frozen, thawed and drained)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, whisk together the eggs and heavy cream until well combined.
  3. Stir in the shredded cheddar cheese, cooked sausage, chopped spinach, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) until evenly mixed.
  4. Pour the egg mixture into the prepared baking dish, spreading it out evenly.
  5. Cover the dish with plastic wrap and refrigerate overnight (or for at least 4 hours) to allow the flavors to meld and the casserole to set.
  6. When ready to bake, remove the plastic wrap and bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
  7. Let it cool for a few minutes before slicing. Garnish with chopped green onions before serving.

Notes

  • For added flavor, consider mixing in diced bell peppers or mushrooms.
  • Serve with keto-friendly sides like pork rinds, celery sticks, or cucumber slices for a complete meal.
