Description
A delicious and easy-to-make overnight breakfast casserole that combines eggs, cheese, sausage, and spinach for a hearty morning meal.
Ingredients
Scale
- 8 large eggs
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled breakfast sausage
- 1 cup chopped spinach (fresh or frozen, thawed and drained)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped green onions (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, whisk together the eggs and heavy cream until well combined.
- Stir in the shredded cheddar cheese, cooked sausage, chopped spinach, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) until evenly mixed.
- Pour the egg mixture into the prepared baking dish, spreading it out evenly.
- Cover the dish with plastic wrap and refrigerate overnight (or for at least 4 hours) to allow the flavors to meld and the casserole to set.
- When ready to bake, remove the plastic wrap and bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
- Let it cool for a few minutes before slicing. Garnish with chopped green onions before serving.
Notes
- For added flavor, consider mixing in diced bell peppers or mushrooms.
- Serve with keto-friendly sides like pork rinds, celery sticks, or cucumber slices for a complete meal.
