- 4 cod fillets (about 6 ounces each)
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 lemon, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- In another bowl, whisk together the eggs and Dijon mustard until well combined.
- Dip each cod fillet into the egg mixture, allowing any excess to drip off, then coat it with the almond flour mixture, pressing gently to adhere.
- Place the coated fillets on the prepared baking sheet. Drizzle olive oil over the top of each fillet.
- Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- Remove from the oven and let rest for a few minutes. Garnish with lemon slices and chopped parsley before serving.
Notes
- For added flavor, try mixing in some chopped fresh herbs like dill or thyme into the almond crust mixture.
- Substitute the cod with other white fish like tilapia or haddock for a different taste and texture.
