  • 1 teaspoon paprika

  • 2 large eggs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 lemon, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  3. In another bowl, whisk together the eggs and Dijon mustard until well combined.
  4. Dip each cod fillet into the egg mixture, allowing any excess to drip off, then coat it with the almond flour mixture, pressing gently to adhere.
  5. Place the coated fillets on the prepared baking sheet. Drizzle olive oil over the top of each fillet.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Remove from the oven and let rest for a few minutes. Garnish with lemon slices and chopped parsley before serving.
