A delicious keto-friendly blueberry ganache tart with a rich chocolate crust and topped with fresh blueberries.

- 1 ½ cups almond flour
- ¼ cup unsweetened cocoa powder
- ¼ cup erythritol (or preferred keto sweetener)
- ½ teaspoon salt
- ½ teaspoon baking powder
- 5 tablespoons unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 ounces sugar-free dark chocolate, chopped
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F. Grease a 9-inch tart pan with removable bottom.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, salt, and baking powder. Stir until well mixed.
- Add the melted butter, egg, and vanilla extract to the dry ingredients. Mix until a dough forms. Press the dough evenly into the bottom and up the sides of the prepared tart pan.
- Bake the crust for 12-15 minutes or until firm. Remove from the oven and let it cool completely.
- While the crust cools, prepare the ganache. In a small saucepan over medium heat, bring the heavy cream to a simmer. Remove from heat and add the chopped sugar-free dark chocolate and vanilla extract. Stir until the chocolate is completely melted and the mixture is smooth.
- Pour the ganache into the cooled tart crust, spreading it evenly. Top with fresh blueberries.
- Refrigerate the tart for at least 2 hours to set the ganache.
- Slice and serve chilled. This tart pairs well with pork rinds, celery sticks, or cucumber slices for a refreshing crunch.
Notes
- For added flavor, consider adding a sprinkle of sea salt on top of the ganache before chilling.
- You can also substitute the blueberries with raspberries or strawberries for a different berry flavor.
