Ingredients

  • 5 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces sugar-free dark chocolate, chopped
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch tart pan with removable bottom.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, salt, and baking powder. Stir until well mixed.
  3. Add the melted butter, egg, and vanilla extract to the dry ingredients. Mix until a dough forms. Press the dough evenly into the bottom and up the sides of the prepared tart pan.
  4. Bake the crust for 12-15 minutes or until firm. Remove from the oven and let it cool completely.
  5. While the crust cools, prepare the ganache. In a small saucepan over medium heat, bring the heavy cream to a simmer. Remove from heat and add the chopped sugar-free dark chocolate and vanilla extract. Stir until the chocolate is completely melted and the mixture is smooth.
  6. Pour the ganache into the cooled tart crust, spreading it evenly. Top with fresh blueberries.
  7. Refrigerate the tart for at least 2 hours to set the ganache.
  8. Slice and serve chilled. This tart pairs well with pork rinds, celery sticks, or cucumber slices for a refreshing crunch.

  • For added flavor, consider adding a sprinkle of sea salt on top of the ganache before chilling.
