Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup small pasta (like ditalini or elbow)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced carrots, celery, zucchini, and green beans. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Pour in the diced tomatoes with their juice and the vegetable broth. Bring the mixture to a boil.
  5. Once boiling, add the kidney beans, small pasta, oregano, basil, salt, and pepper. Reduce the heat to a simmer and cook for 10-12 minutes, or until the pasta is tender.
  6. Stir in the chopped spinach or kale and cook for an additional 2-3 minutes until wilted.
  7. Taste and adjust seasoning if necessary. Serve hot, topped with grated Parmesan cheese if desired.

Notes

  • For a heartier soup, add diced potatoes or butternut squash along with the other vegetables.
  • To make it a protein-packed meal, stir in cooked chicken or sausage before serving.
