Ingredients

  • 2 cups powdered sugar
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 3 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar (for filling)
  • 2 teaspoons vanilla extract (for filling)
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a bowl, sift together the powdered sugar, almond flour, and cocoa powder. Set aside.
  3. In a separate bowl, beat the egg whites with an electric mixer on medium speed until frothy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, and beat until stiff peaks form.
  4. Gently fold the dry ingredients into the egg whites in three additions, being careful not to deflate the mixture. The batter should flow like lava.
  5. Transfer the batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each macaron. Tap the baking sheets on the counter to release any air bubbles.
  6. Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface.
  7. Bake in the preheated oven for 15-18 minutes, or until the macarons are firm and can be lifted off the parchment paper without sticking. Allow them to cool completely on the baking sheets.
  8. While the macarons cool, prepare the vanilla cream filling. In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, vanilla extract, and heavy cream, mixing until smooth and fluffy.
  9. Once the macarons are cool, pair them up by size. Pipe a dollop of vanilla cream filling onto the flat side of one macaron and sandwich it with its pair.
  10. Store the assembled macarons in an airtight container in the refrigerator for at least 24 hours to allow the flavors to meld. Bring to room temperature before serving.

Notes

  • For a fun twist, add crushed Oreo cookies to the filling for extra flavor and texture.
  • Experiment with different flavors by substituting the vanilla extract in the filling with almond or peppermint extract.
