Description
A delightful trifle made with layers of orange blossom semolina cake, whipped cream, and fresh orange segments, garnished with pistachios and mint.

- 2 cups whole milk
- 1 cup semolina
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup orange blossom water
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup orange segments (fresh or canned)
- 1/2 cup chopped pistachios (for garnish)
- Fresh mint leaves (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
- In a medium saucepan, heat the milk over medium heat until warm. Gradually whisk in the semolina, stirring constantly to prevent lumps. Cook for about 5 minutes until the mixture thickens. Remove from heat and let it cool slightly.
- In a large bowl, combine the sugar, melted butter, eggs, baking powder, salt, and orange blossom water. Mix well until smooth.
- Gradually fold the semolina mixture into the egg mixture until fully combined. Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the cake is cooling, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Once the cake is completely cool, cut it into cubes. In a large trifle dish or individual serving glasses, layer the cake cubes, orange segments, and whipped cream. Repeat the layers until the dish is filled, finishing with a layer of whipped cream on top.
- Garnish with chopped pistachios and fresh mint leaves. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- For a more intense orange flavor, add a tablespoon of orange zest to the cake batter.
- Substitute the orange blossom water with rose water for a different floral note, or use vanilla extract for a classic flavor.
