Ingredients

  • 2 cups whole milk
  • 1 cup semolina
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon baking powder

  • 1/4 cup orange blossom water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup orange segments (fresh or canned)
  • 1/2 cup chopped pistachios (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
  2. In a medium saucepan, heat the milk over medium heat until warm. Gradually whisk in the semolina, stirring constantly to prevent lumps. Cook for about 5 minutes until the mixture thickens. Remove from heat and let it cool slightly.
  3. In a large bowl, combine the sugar, melted butter, eggs, baking powder, salt, and orange blossom water. Mix well until smooth.
  4. Gradually fold the semolina mixture into the egg mixture until fully combined. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  6. While the cake is cooling, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  7. Once the cake is completely cool, cut it into cubes. In a large trifle dish or individual serving glasses, layer the cake cubes, orange segments, and whipped cream. Repeat the layers until the dish is filled, finishing with a layer of whipped cream on top.
  8. Garnish with chopped pistachios and fresh mint leaves. Refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For a more intense orange flavor, add a tablespoon of orange zest to the cake batter.
  • Substitute the orange blossom water with rose water for a different floral note, or use vanilla extract for a classic flavor.
