A delicious twist on the classic grilled cheese, featuring savory birria and a side of consommé for dipping.
Ingredients

- 2 slices of bread
- 1 cup shredded birria meat
- 1 cup shredded cheese (such as Oaxaca or mozzarella)
- 2 tablespoons butter
- 1 cup consommé (for dipping)
Instructions
- Heat a skillet over medium heat.
- Butter one side of each slice of bread.
- Place one slice of bread, butter-side down, in the skillet.
- Add the shredded birria meat and cheese on top of the bread in the skillet.
- Top with the second slice of bread, butter-side up.
- Cook until the bottom slice is golden brown, then flip and cook the other side until golden and the cheese is melted.
- Remove from skillet and cut in half.
- Serve with a side of warm consommé for dipping.
Notes
- For extra flavor, add some chopped cilantro or onions to the birria before grilling.
- Use a mix of cheeses for a more complex flavor.
- Make sure the skillet is hot enough to get a nice crust on the bread.
