Description

A delicious twist on the classic grilled cheese, featuring savory birria and a side of consommé for dipping.


Ingredients

  • 2 slices of bread
  • 1 cup shredded birria meat
  • 1 cup shredded cheese (such as Oaxaca or mozzarella)
  • 2 tablespoons butter
  • 1 cup consommé (for dipping)

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. Place one slice of bread, butter-side down, in the skillet.
  4. Add the shredded birria meat and cheese on top of the bread in the skillet.
  5. Top with the second slice of bread, butter-side up.
  6. Cook until the bottom slice is golden brown, then flip and cook the other side until golden and the cheese is melted.
  7. Remove from skillet and cut in half.
  8. Serve with a side of warm consommé for dipping.

Notes

  • For extra flavor, add some chopped cilantro or onions to the birria before grilling.
  • Use a mix of cheeses for a more complex flavor.
  • Make sure the skillet is hot enough to get a nice crust on the bread.
