- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix honey, soy sauce, and minced garlic.
- Place chicken breasts in a large baking dish and pour the honey garlic mixture over them.
- Add the sliced bell pepper, zucchini, and broccoli around the chicken.
- Drizzle olive oil over the vegetables and season with salt and pepper.
- Toss the vegetables to coat them in the sauce.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
