  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 2 tablespoons fresh orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, combine the sugar and olive oil. Beat with an electric mixer on medium speed until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and orange zest.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk together the powdered sugar, lemon juice, and orange juice in a small bowl until smooth.
  9. Once the cake is completely cooled, drizzle the glaze over the top.
