- 1 cup granulated sugar
- ¾ cup extra virgin olive oil
- 3 large eggs

- Zest of 1 lemon
- Zest of 1 orange
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
- 2 tablespoons fresh orange juice (for glaze)
Instructions
- Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, combine the sugar and olive oil. Beat with an electric mixer on medium speed until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and orange zest.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, lemon juice, and orange juice in a small bowl until smooth.
- Once the cake is completely cooled, drizzle the glaze over the top.
Notes
- For a richer flavor, try adding ½ teaspoon of almond extract to the batter.
- You can substitute the citrus glaze with a simple dusting of powdered sugar for a lighter finish.
