  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or lamb
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust for spice preference)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup fresh parsley, chopped
  • Crusty bread, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced red bell pepper, and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the ground beef or lamb to the skillet. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain any excess fat if necessary.
  3. Stir in the ground cumin, paprika, cayenne pepper, diced tomatoes, tomato sauce, water, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.
  4. Make four small wells in the meat mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  5. Remove from heat and sprinkle with fresh parsley. Serve immediately with crusty bread for dipping.
