- 1 medium onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 pound ground beef or lamb
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- 1 can (14.5 ounces) diced tomatoes, drained
- 1/2 cup tomato sauce
- 1/2 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large eggs
- 1/4 cup fresh parsley, chopped
- Crusty bread, for serving
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced red bell pepper, and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef or lamb to the skillet. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain any excess fat if necessary.
- Stir in the ground cumin, paprika, cayenne pepper, diced tomatoes, tomato sauce, water, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.
- Make four small wells in the meat mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- Remove from heat and sprinkle with fresh parsley. Serve immediately with crusty bread for dipping.

- For a vegetarian version, substitute the ground meat with cooked lentils or chickpeas.
