  • 1 can (14.5 ounces) of diced tomatoes, with juice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté for about 5 minutes, or until the onion is translucent.
  2. Stir in the minced garlic and cook for another minute, until fragrant.
  3. Add the diced tomatoes (with their juice), nyimo beans, ground cumin, smoked paprika, salt, and black pepper. Stir well to combine.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 15-20 minutes, stirring occasionally.
  5. If desired, add lemon juice for a touch of brightness just before serving.
  6. Serve hot, garnished with chopped parsley.
