Ingredients

- 2 cups shelled pistachios
- 1 cup unsweetened coconut flakes
- 1/2 cup unsweetened dried cranberries
- 1/2 cup almond butter
- 1/4 cup melted coconut oil
- 1/4 cup erythritol or your choice of keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper, allowing some paper to hang over the edges.
- In a large bowl, mix together the shelled pistachios, coconut flakes, and dried cranberries.
- In another bowl, combine the almond butter, melted coconut oil, erythritol, vanilla extract, and sea salt, whisking until creamy and smooth.
- Gradually pour the almond butter mixture over the dry ingredients, stirring thoroughly to coat everything evenly.
- Transfer the mixture into the lined baking dish and press it down firmly into a flat, even layer.
- Bake in the oven for about 15 to 20 minutes, or until the edges turn golden brown.
- Allow to cool completely before lifting the bars out using the parchment paper.
- Cut into squares or rectangles as desired.
- Store in an airtight container in the fridge for up to a week.
Notes
- Enhance flavor by adding a teaspoon of cinnamon or a tablespoon of chia seeds.
- Swap pistachios for walnuts or almonds for a different nutty profile.
