- 2 cups of smooth mashed potatoes (approximately 2 large potatoes)
- 1 cup of all-purpose flour
- 1 large egg
- 1 teaspoon of salt
- 1/2 teaspoon of freshly ground black pepper
- 1/2 teaspoon of baking powder
- 1/4 cup of finely chopped fresh parsley (optional)
- 1/4 cup of melted butter (for drizzling)
- 1/4 cup of sour cream (for dipping)
Instructions
- Peel the potatoes and boil them in salted water until soft, about 15-20 minutes. Drain and mash until smooth. Let cool for a few minutes.
- In a mixing bowl, combine the cooled mashed potatoes with flour, egg, salt, black pepper, and baking powder. Stir until a soft dough forms. Optionally, mix in chopped parsley.
- On a floured surface, divide the dough into 8 equal pieces and roll each into a ball, roughly the size of a golf ball.
- Bring a large pot of salted water to a gentle simmer. Carefully place the potato balls into the water and cook for about 10-12 minutes, or until they rise to the surface.
- Use a slotted spoon to transfer the potato balls to a plate to drain excess water.
- Melt the butter in a small pan over medium heat and pour it over the potato balls just before serving. Serve with sour cream on the side for dipping.
